Superfoods 101

Ever wonder what makes superfoods so super? Superfoods are edible powerhouses that pack extra nutrients, antioxidants, and vitamins, minerals, and other properties. A diet rich in superfoods like organic beets, blueberries, bell peppers, kale, and wheat grass can actually lower cancer risk, prevent disease, and reverse some of the effects of aging via antioxidants. You can see why it’s a good idea to get as many of them into one’s diet ASAP to reap the benefits! However, that could mean an awful lot of rinsing and chopping three times a day. Thankfully, we’ve thought of a solution for that, too. For now, let’s dig in to a few superfoods you’ll want on your plate and in your blender, stat.

Beets are an earthy, sweet root vegetable with 20% of the recommended daily amount of folate, a nutrient that is needed for healthy fetal brain development in pregnant women as well as providing teens and adults with necessary B vitamins for growth, energy, bone health, and more. Roasted beets are a delicious way to enjoy these jewel-toned root veggies.

Blueberries are delightfully tasty and chock full of antioxidants, vitamin c, vitamin k, fiber, and manganese. These little blue gems are also super high in flavonoids, an antioxidant that helps them fight free-radicals and cancer. This blueberry pomegranate smoothie makes the most of their juicy berry flavor!

Bell peppers are loaded with a long list of vitamins, including A, C, K, and E, plus folate, fiber, potassium, and more. They contain anti-inflammatory quercetin, which, unless you are sensitive to nightshades, can help reduce inflammation and joint pain, like arthritis, and their wide range of other antioxidants promote eye health, among a surprisingly long list of benefits. Enjoy them cut into raw, crunchy strips for dipping in superfood hummus or roast them for summer salads!

Kale is a long time darling of the veggie world, with high quantities of fiber, folate, zinc, vitamin c, calcium, iron, magnesium, and carotenoids, which are antioxidants that research says may reduce risk to some cancers. Studies also show kale may reduce risks for heart disease and type 2 diabetes. We love to pop leafy kale greens into a smoothie with tropical fruits, a la this Piña Kale-ada Smoothie Bowl.

Wheat grass A little bit sweet, wheatgrass is loaded with chlorophyll, the chemical that makes plants green. Chlorophyll is naturally deodorizing, improves digestion, and can balance the body’s ph. Wheatgrass also contains 8 essential amino acids and a wide spectrum of vitamins, minerals, and antioxidants. In one study, wheatgrass may even have been as effective as a prescription drug in lowering cholesterol- wow! Try growing wheat grass at home and snip the tender blades into your morning smoothie for an extra green start to your day.
