Sweet Potato Protein Toast

Avocado, sweet potato toast with a protein-filled, dairy-free spread. Clean, green goodness from the first bite to the last! 🍠 🥑
Ingredients
- 1/8th of a scoop Orgain Organic Protein Plant Based Protein Powder, Unsweetened (*per serving – see note below)
- 1 large sweet potato
- 1 tbsp olive oil or coconut oil (optional)
- Sliced avocado
- 2 tbsp dairy-free cream cheese
- Microgreens for garnish
- Everything Bagel Seasoning
Instructions
- Preheat oven to 400F. Line a large baking sheet with parchment paper.
- Cut off the ends of the sweet potato, slice ½ inch thick lengthwise and place on a baking sheet.
- Lightly brush oil on top of sweet potato slices with pastry brush.
- Back 20 mins. Test doneness by piercing with a fork.
- Mix dairy-free cream cheese with Orgain Organic Protein Powder in a bowl until smooth and combined.
- Top sweet potato slices with cream cheese, sliced avocado, microgreens and everything bagel seasoning,
- Refrigerate in an airtight container for 4-5 days to reheat in toaster.
Note: In making this recipe we used 8 oz of dairy free cream cheese with 1 scoop of protein powder. We then used 2 tbsp of the protein cream cheese on the sweet potato toast.
