Protein Sweet Potato Hummus

Everything you love about hummus… Plus sweet potato! Add in Orgain Organic Protein Powder for a 21 g serving of clean, plant-based protein, and you’ll see why this hummus is a must for clean holiday snacking.
Ingredients
- 2 scoops Orgain Organic Protein Plant Based Protein Powder - Unsweetened
- 1 sweet potato
- 3 garlic cloves, skin on
- 1 1/2 cups cooked red lentils
- 1 tbsp tahini
- 1 tbsp olive oil
- Lemon juice
- Salt and pepper to taste
- Pomegranate seeds
Instructions
- Roast the sweet potato and garlic at 200C / 400F until soft—app. 3-5 mins for the sweet potato, 15 mins for garlic.
- Cool each—app. 5-10 mins—before blending.
- Remove the skin from the roasted vegetables blend with the lentils, tahini, oil, lemon juice and seasoning, until smooth—app. 3-5 mins.
- Add Orgain protein powder and water for consistency, lemon and salt to taste.
- Top with olive oil, za'atar (optional), pomegranate seeds and parsley.
