Protein Peppermint Cookie Sandwiches

You’ll love how this cookie crumbles. Stir in peppermint hot chocolate protein for a sweet treat with a refreshing peppermint cookie sandie.
Ingredients
- To make the cookies:
- 1/2 cup earth balance
- 1 cup coconut sugar
- 1 teaspoon vanilla extract
- 1 cup oat or coconut flour
- 2 scoops Orgain Peppermint Hot Cocoa Protein Powder
- 1/3 cup cocoa powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1-2 TBSP dairy free milk
- 4 oz chocolate chunks To make the sandwiches:
- 2 cups Dairy Free Ice Cream (we used vanilla, can use peppermint white chocolate)
- 1/2 cup Crushed Peppermint Candy Pieces
Instructions
To make the cookies:
- Preheat the oven to 350°F
- Add the vegan butter and coconut sugar to an electric mixing bowl and cream together. Add the vanilla and mix in.
- Sift the flour, cocoa powder, protein powder, baking soda and salt in a mixing bowl.
- Add the dry ingredients to the wet, mixing in by hand until crumbly.
- Add the non-dairy milk and mix into the cookie dough.
- Add the chocolate chunks and mix in. Your cookie dough will be very thick, but sticky enough to easily roll into balls.
- Roll into small balls and space evenly on a parchment lined baking tray.
- Bake for 10 minutes. The edges will be firm but the cookies will be soft in the middle and will firm up as they cool.
- To make the sandwiches:
- Freeze the cookies for at least 1-2 hours.
- Allow dairy free ice cream to thaw for a ten minutes. Using a #16 ice cream scoop, scoop ice cream onto cookie, and then spread to edges using an offset spatula.
- Top with additional cookie and roll edges in crushed peppermint candy pieces. Re-Freeze before serving.
