Protein + Oatmilk Blueberry Bars

Adding Vanilla Protein + Oatmilk Powder to these blueberry bars makes them oat-believable.

Ingredients

  • 1 1/2 cups oats
  • 2 scoops Orgain Organic Protein + Oatmilk Protein Powder - Vanilla
  • 2 tbsp ground flaxseed
  • 1/4 tsp cinnamon
  • 1/8 tsp saltv
  • 3 tbsp honey
  • 1/4 cup cashew butter
  • 3/4 cup oat milk
  • 1 tsp vanilla extract
  • 1 1/2 cups of blueberries
  • Toppings
  • 1/2 cup oats
  • 3 tbsp coconut sugar
  • 2 tbsp cashew butter

Instructions

  1. In a large bowl, mix 1 1/2 cups oat, 2 scoops protein powder, ground flaxseed, cinnamon, and salt.
  2. In another bowl, combine the honey, 1/4 cup cashew butter, oat milk, and vanilla. Mix until fully combined. Stir the wet ingredients into the dry ingredients until fully integrated.
  3. Pour batter into prepared loaf pan, spreading evenly. Sprinkle blueberries on top.
  4. To make the topping, combine the remaining oats, coconut sugar, and remaining cashew butter until mixed throgoughly. Sprinkle evenly on top of blueberries.
  5. Bake 25-35 minutes until the top is golden brown. Cool in pan for 20 minutes before removing and cutting into 8 pieces.
