Protein Holiday Parfaits

Ingredients
- 110 g rolled oats (jumbo oats)
- 2 tablespoons chia seeds
- 2 teaspoon espresso powder
- 2 scoops Orgain Organic Iced Coffee Protein Powder
- 1/4 teaspoon fine sea salt
- 2 tablespoons pure maple syrupv
- 1 teaspoon pure vanilla extract
- 1 1/3 cups oat milk
- 12 ounces dairy free yogurt
- Cacao nibs, for topping
- Fresh Raspberries, for topping
Instructions
- Add the oats, chia seeds, espresso powder, salt, maple syrup, vanilla, protein powder and oat milk to a sealable container.
- Stir well to combine. Pop the lid on and place in the fridge to set overnight.
- Line up parfait glasses. Layer 1 tablespoon of yogurt followed by a 1/2 ounce of oat mixture. Repeat layers once more and finish with a tablespoon of yogurt.
- Garnish with a couple fresh raspberries and 1 teaspoon of cacao nibs.
- Serve immediately.
