Peanut Butter Stuffed Protein Cookies

About this Recipe

A batch made in heaven! Bake this vegan take on an all-time favorite–made with clean peanut butter protein 🍪 😋

  1. Preheat oven to 350F.
  2. Mix 1 scoop of Orgain Protein Powder, almond flour, coconut oil, maple syrup, vanilla and sea salt in a medium bowl until combined into a dough.
  3. Scoop dough using a tablespoon and form into a round cookie shape. Use your finger to create a small dent in the center of each cookie.
  4. Place cookies on a parchment lined baking sheet and bake for 15-18 minutes, until cookies are slightly golden brown on the bottom. Let cool completely on the baking sheet.
  5. Mix the other 1 scoop of Orgain Organic Plant Based Peanut Butter Protein Powder with peanut butter in a small bowl until well combined.
  6. Add 1/2-1 teaspoon of peanut butter into the dent of each cookie and spread it a little over the top.
  7. Place cookies in the fridge for about 15-30 minutes to let the peanut butter harden.
  8. Melt chocolate chips and coconut oil in a double boiler or microwave. For the microwave method, add chips and coconut oil to a microwave safe bowl and heat for 1 minute, stir and heat in 30 second increments until chocolate has melted.
  9. Remove chilled cookies from the fridge/freezer. Use a fork to dip and remove each cookie one-by-one in the chocolate, making sure to let the excess chocolate drip off before transferring back to the baking sheet lined with parchment.
  10. Place chocolate covered cookies in the fridge for about 15-20 minutes to let chocolate set.
  11. Enjoy right away and store any leftovers in fridge until ready to eat.
