Almond Delight Protein Bars Recipe



  1. Combine dates, almond butter, ½ cup rolled oats and protein powder in a powerful food processor and pulse until incorporated.
  2. Add almond extract, almond milk and honey and mix well until a sticky dough forms.
  3. Remove from processor and place in a bowl.
  4. With your hands, mix in the chopped almonds and shredded coconut.
  5. Place in an 8X8 baking dish and push into the dough, molding it into the dish.
  6. Top with shredded coconut and (if desired) pipe some melted chocolate in lines across the top.
  7. Freeze for at least 2 hours to set and cut into 10 bars.
  8. Store in fridge or freezer and enjoy cold!
