Nut-Free Pumpkin Spice Protein Granola

Ingredients

  • ¾ cup Orgain Organic Pumpkin Spice Protein Powder
  • 2 cups rolled oats
  • ½ cup unsweetened sunflower seed butter
  • ¼ cup pure maple syrup
  • 1 tablespoon neutral oil
  • 1 tsp vanilla extract
  • ½ cup unsweetened dried cranberries
  • ½ cup roasted pumpkin seeds, optional

Instructions

  1. Preheat the oven to 350 degrees. Line a large baking tray with parchment paper and set
  2. In a medium size mixing bowl, add the oats and protein powder and mix until well
  3. In a large microwave safe bowl, add the sunflower seed butter and maple syrup and microwave in 20-second spurts, until the sunflower seed butter has Mix well. Stir in oil and vanilla extract.
  4. Add the dry ingredients to the wet ingredients and mix well with a spoon or your hands, until fully incorporated.
  5. Transfer the protein granola mixture onto the lined baking tray and spread in an even layer. Place the baking tray in the oven and bake for 16 minutes, stirring halfway through. For crunchier granola, flatten the granola with a spatula at the halfway
  6. Remove the granola from the oven and mix once more, before letting it cool completely for at least 25 minutes Once cooled, transfer to a large mixing bowl and add dried cranberries and pumpkin seeds.
