Ingredients
- 1/2 cup natural peanut butter (just peanuts + salt)
- 2 tablespoons coconut oil
- 2 tablespoons honey (use coconut palm syrup if vegan)
- 1 teaspoon vanilla extract
- 1/2 cup Vanilla Almond Butter protein powder
- 1 cup oats
- 2 tablespoons chia seeds
- 1/3 cup unsweetened shredded coconut
- 2 tablespoons cashew milk - if mixture seems dry you can add additional tablespoons of cashew milk so that the consistency makes it possible for the mixture to come together
- 2 tablespoons chocolate chips + 1 teaspoon coconut oil
- Fancy sea salt, for sprinkling
Instructions
- Mix the wet ingredients. You’ll want to mix together the peanut butter, coconut oil, honey & vanilla in a saucepan over low heat so they get nice and smooth.
- Add the dry. Stir in the protein powder, then fold in your yummy add-ins: oats, chia seeds and coconut. Use a medium cookie scoop or your hands to grab dough and roll into 12 balls
- Melt the chocolate. Add the chocolate chips and coconut oil to a saucepan over low heat and melt it. You can also do this in a microwave safe dish! Drizzle it over the balls. Optional: Add a little seasonal flair with a candy gem and sprinkle mix!
- Refrigerate and enjoy. Put the balls in the refrigerator to set for about 1 hour, then enjoy!
