Kale & Bean Soup

Kale-in it with this deliciously clean, Kale & Bean Soup. 👍🏼 Now this is the clean comfort that can help warm things up.
Ingredients
- 2 scoops Orgain Organic Protein Plant Based Protein Powder - Unsweetened
- 2 tbsp extra virgin olive oil
- 1/2 large white onion — 1 cup diced
- 2 carrots — 1 cup diced
- 2 celery stalks — 1 cup diced
- 5 garlic cloves — finely chopped
- 1, 28 oz can diced tomatoes
- 2, 15 oz cans cannellini beans
- 4 cups vegetable broth
- 1/2 tsp kosher salt
- 1/2 tsp italian seasoning
- 1/4 tsp crushed red pepper optional
- 4 cups kale — 2 oz chopped
Instructions
- Heat olive oil on med-high heat, adding onions, carrots, celery and garlic—sauté 1-3 mins until tender.
- Stir in tomatoes, veggie stock, beans, salt, italian seasoning, and (optional) crushed red pepper.
- Bring soup to a boil; then simmer 10 mins, stirring in Orgain protein powder.
- Add kale and simmer until kale is wilted.
- Note: You can add kale during the simmering process, if you prefer.
