Clean On the Cob With Vegan Aioli

  1. Prepare grill
  2. Peel back corn husks carefully, without breaking off, and discard the silks.
  3. Fold husks back into place and tie ends together with strips of outer husk or kitchen string.
  4. In a large bowl, cover corn with cold water and soak 10 minutes. Drain corn.
  5. Grill on a rack set 5 to 6 inches over glowing coals, turning occasionally, about 12-15 minutes.
  6. While corn grills, make aioli. Mix vegan mayo, lime juice and zest, cumin, chili powder, smoked paprika, and protein powder.
  7. Serve 1.5 tbsp of aioli over each ear of corn. Enjoy!
