Cauliflower Protein Bowl

About this Recipe
Try making these cauliflower protein bowls packed with 12g of protein. They're a guaranteed crowd pleaser.
Ingredients
- 1 cup white rice, uncooked
- 1 large head of cauliflower
- 2 teaspoons olive oil
- 2 teaspoons Taco Seasoning
- 1 1/2 cup canned Black Beans, drained and rinsed
- 1/2 cup Organic Vegetable Broth
- 4 tomatoes, chopped
- 1/2 cup chopped onions
- 1/4 cup chopped Cilantro leaves, plus additional leaves for serving
- 3/4 cup corn, either fresh off the cob (1 ear) or frozen
- 1 Avocado, sliced
- 1 scoop Orgain Plant Based Protein Powder, unsweetened
- 1 lime, juiced, plus additional lime wedges for serving
- Hot sauce, for topping
Instructions
- Cook the rice according to package directions
- 2) Heat the oven to 400 degrees.
- Toss cauliflower with 2 teaspoons of olive oil and 1 teaspoon taco seasoning.
- Roast for 20-30 minutes, tossing halfway through to prevent burning.
- To make the beans- combine drained and rinsed beans, broth and 1 teaspoon of taco seasoning in a small saucepan over low-medium heat.
- Mash the beans with a fork until the mixture gets creamy. Stir in the protein powder.
- To make the pico- combine the chopped tomatoes and onions. Mix in cilantro and the juice of one lime.
- Divide the rice, cauliflower, beans, pico, corn, and avocado into six bowls.
- Top with hot sauce and additional cilantro sprigs and lime wedges.
