Cauliflower Protein Bowl

Try making these cauliflower protein bowls packed with 12g of protein. They're a guaranteed crowd pleaser.


  • 1 cup white rice, uncooked
  • 1 large head of cauliflower
  • 2 teaspoons olive oil
  • 2 teaspoons Taco Seasoning
  • 1 1/2 cup canned Black Beans, drained and rinsed
  • 1/2 cup Organic Vegetable Broth
  • 4  tomatoes, chopped
  • 1/2 cup chopped onions
  • 1/4 cup chopped Cilantro leaves, plus additional leaves for serving
  • 3/4 cup corn, either fresh off the cob (1 ear) or frozen
  • 1 Avocado, sliced
  • 1 scoop Orgain Plant Based Protein Powder, unsweetened
  • 1 lime, juiced, plus additional lime wedges for serving
  • Hot sauce, for topping


  1. Cook the rice according to package directions
  2. 2) Heat the oven to 400 degrees.
  3. Toss cauliflower with 2 teaspoons of olive oil and 1 teaspoon taco seasoning.
  4. Roast for 20-30 minutes, tossing halfway through to prevent burning.
  5. To make the beans- combine drained and rinsed beans, broth and 1 teaspoon of taco seasoning in a small saucepan over low-medium heat.
  6. Mash the beans with a fork until the mixture gets creamy. Stir in the protein powder.
  7. To make the pico- combine the chopped tomatoes and onions. Mix in cilantro and the juice of one lime.
  8. Divide the rice, cauliflower, beans, pico, corn, and avocado into six bowls.
  9. Top with hot sauce and additional cilantro sprigs and lime wedges.
