Banana & Spinach Protein Pancakes

  • 1 cup Organic Plant-Based Protein Pancake & Waffle Mix
  • 1 tsp cinnamon
  • 1 large egg (optional for best taste)
  • 1/2 cup Organic Protein Almond Milk - Unsweetened Vanilla
  • 1 cup mashed ripe banana (or sub unsweetened applesauce)
  • 2 tbsp melted coconut oil or avocado oil plus more for cooking
  • 1-2 handfuls baby spinach depending on how green you want them
  • Optional toppings - bananas, blackberries, blueberries, raspberries, kiwi.


  1. Combine spinach, banana, milk, oil, egg (optional), in a blender.
  2. Blend until mixture is very smooth and well pureed.
  3. Add 1 cup of Orgain Protein Pancake & Waffle Mix and blend until well combined and smooth.
  4. Heat a skillet over medium-low heat and add a little oil. Once hot, portion out the pancake batter into the pan.
  5. Cook until you see small bubbles forming on the top of the pancake and the edges seem dry, about 2 minutes. Flip and cook the other side for another 2 minutes.
  6. Place cooked pancakes onto a plate and continue with the remaining batter.
  7. Enjoy warm with topping of choice.
