GREEN GODDESS DRESSING
- 2 scallions, white part only
- ½ jalapeno, seeds removed
- 2/3 cup Greek yogurt
- 2 scoops Orgain Collagen Peptides
- ½ cup cilantro
- Juice from 1 lime
- 1 Tbsp. honey
- ½ avocado
- 3 cloves garlic
- Salt and pepper to taste
- ¼ cup olive oil
- 4 cups arugula
- 1 cucumber
- 1 large avocado
- 6 radishes
- ½ cup edamame, shelled
- ½ cup garden peas
- ½ small jicama
- 8 asparagus spears
- ½ cup shredded carrots
- Micro greens and hemp seeds for sprinkling

Step 1: Make dressing: Combine all ingredients in a blender and pulse until incorporated.
Step 2: Prepare salad: slice cucumber into long, thin strips using a
vegetable peeler. Roll up. Cut avocado into thin strips. Thinly slice radishes. Peel jicama and chop into small bite-sized pieces.
Step 3: Assemble salad: Arrange salad ingredients on a large platter or divide into individual portions. Drizzle with desired amount of dressing.
NOTES
- *Extra dressing can be stored in the fridge for 3-4 days.
