Single Serving Protein Carrot Cake

Ingredients

  • 1/4 cup gluten-free flour
  • 1 Scoop Plant Protein + Collagen - Vanilla
  • 2 tbsp coconut sugar
  • Pinch salt
  • 1/4 tsp cinnamon
  • 1/2 flax egg (2 tsp ground flaxseed + 1 tbsp water)
  • 1/4 tsp vanilla
  • 1 tbsp olive oil
  • 1 tbsp milk
  • 1/4 cup grated carrot

Instructions

  1. Preheat oven to 350F.
  2. In a small bowl, whisk sugar , flax egg, vanilla, oil, Plant Protein + Collagen and milk until well combined.
  3. In another bowl whisk flour, cinnamon, and salt.
  4. Combine dry & wet ingredients.
  5. Fold in grated carrot.
  6. Bake for 25-30 minutes or until the toothpick comes out clean.
