Pumpkin Spice Protein Crispie Treats

About this Recipe

Try these wholesome and indulgent pumpkin-shaped crispie treats for a cozy kick of fall flavor. For a finishing touch, pop the Krispie mix in a chocolate dipped silicone mold of your favorite fall inspired shape – of course, we’re going with pumpkins for ours.

Ingredients

  • 3 tbsp coconut oil
  • 3/4 of a 10oz bag mini marshmallows (option to use vegan or sugar free marshmallows)
  • 1/3 cup pumpkin purée
  • 3 scoops of Orgain Organic Plant Based Protein Powder - Pumpkin Spice flavor
  • 5 cups brown rice crisps

Chocolate Ingredients:

  • 1 cup dark chocolate chips (sugar free optional)
  • 2 scoops Orgain Organic Plant Based Protein Powder - Pumpkin Spice flavor
  • 2 tsp coconut oil

Instructions

  1. Melt chocolate chips with protein powder & coconut oil until smooth.
  2. Add a layer of the melted chocolate to 12 cup molds of choice & set aside.
  3. In a large pot on medium-low heat, melt the coconut oil with marshmallows & mix together.
  4. Add in pumpkin purée & protein powder & combine.
  5. Pour in rice cereal & turn off heat.
  6. Keep mixing until cereal is incorporated into the rice mixture.
  7. Add 2 tbsp to each mold pressing down firmly with the back of a spoon.
  8. Freeze 30 min then pop them out of the molds.
  9. Store in fridge or freezer.
  10. Enjoy!
