
No Bake Peach-Raspberry Muffin

About this Recipe
Oat muffins get a glow-up with bursts of raspberry, peach, and a drizzle of maple magic. Try this muffin recipe made with Orgain Nut Butter Vanilla Almond-flavored protein for a muffin snack that is secretly strong, but still totally sweet.
Ingredients
Oatmeal Base
- 1 1/2 cup quick oats
- 1 cup creamy almond butter
- 1 scoop Nut Butter Protein Powder - Vanilla Almond
- Pinch of salt
- 1 tsp vanilla
Raspberry Layer
- 2 tsp chia seeds
- 1/2 cup fresh raspberries
- 2 tsp maple syrup or honey
- 1 ripe peach, chopped
Yogurt Base
- 1/2 cup vanilla plant-based yogurt
- 1 scoop Nut Butter Protein Powder - Vanilla Almond
- 1 tbsp sliced almonds
- Crushed freeze-dried raspberries
Instructions
- Combine oatmeal base, then scoop up & roll into balls.
- Press the balls in muffin liners with a spoon, spreading up on the sides.
- Mash raspberries with chia seeds & maple syrup.
- Add a tsp to each muffin.
- Add chopped peaches.
- Stir yogurt & protein powder until smooth, add 1 tbsp on top spreading evenly.
- Sprinkle some sliced almonds & freeze-dried raspberries to finish on top.
- Place in the freezer at least 20 mins.
- Enjoy and store leftovers in freezer.
