No Bake Peach-Raspberry Muffin

Oat muffins get a glow-up with bursts of raspberry, peach, and a drizzle of maple magic. Try this muffin recipe made with Orgain Nut Butter Vanilla Almond-flavored protein for a muffin snack that is secretly strong, but still totally sweet.

Ingredients

Oatmeal Base

  • 1 1/2 cup quick oats
  • 1 cup creamy almond butter
  • 1 scoop Nut Butter Protein Powder - Vanilla Almond
  • Pinch of salt
  • 1 tsp vanilla

Raspberry Layer

  • 2 tsp chia seeds
  • 1/2 cup fresh raspberries
  • 2 tsp maple syrup or honey
  • 1 ripe peach, chopped

Yogurt Base

  • 1/2 cup vanilla plant-based yogurt
  • 1 scoop Nut Butter Protein Powder - Vanilla Almond
  • 1 tbsp sliced almonds
  • Crushed freeze-dried raspberries

Instructions

  1. Combine oatmeal base, then scoop up & roll into balls.
  2. Press the balls in muffin liners with a spoon, spreading up on the sides.
  3. Mash raspberries with chia seeds & maple syrup.
  4. Add a tsp to each muffin.
  5. Add chopped peaches.
  6. Stir yogurt & protein powder until smooth, add 1 tbsp on top spreading evenly.
  7. Sprinkle some sliced almonds & freeze-dried raspberries to finish on top.
  8. Place in the freezer at least 20 mins.
  9. Enjoy and store leftovers in freezer.
