  1. Preheat oven to 350 degrees.
  2. In a food processor, combine protein powder and 1 cup oats. Pulse until a
  3. crumbly mix forms. Set aside 1/3 cup crumbles for the topping.
  4. In a small saucepan, melt coconut oil over low heat. Stir in peanut butter,
  5. honey and vanilla.
  6. Add wet ingredients to dry mix, add in eggs and pulse until combined. Gently
  7. stir in remaining ½ cup oats.
  8. Grease an 8x8 dish. Spoon dough into dish and gently smear top with jam.
  9. Sprinkle with chia seeds and the 1/3 cup dry mix.
  10. Bake 30 minutes, allow to cool and enjoy!
NOTES
*Can be kept up to 3 days stored in fridge or at room temperature.
