Ingredients

  • 2Ā scoops Orgain Organic Plant Based Protein Powder - Creamy Chocolate Fudge
  • 1/2Ā cup Gluten Free Oat Flour
  • 2Ā large Bananas, mashed
  • 2Ā large Eggs, raw (or your favorite egg replacement)
  • 2Ā TBSP Maple Syrup
  • 1Ā tsp Baking Powder
  • 1Ā tsp Baking Soda
  • 1/2Ā tsp Cinnamon
  • 1/4Ā tsp Vanilla extract
  • 1Ā tbsp Unsweetened Cocoa Powder
  • 2Ā tbsp Enjoy Life Semi-sweet Chocolate Mini Chips

Instructions

  1. Preheat the oven to 350 degrees
  2. Line a muffin tin with cupcake liners
  3. Combine oat flour, mashed bananas, eggs, maple syrup, baking powder, baking soda, cinnamon, vanilla, cocoa and protein powder.
  4. Mix until well blended.
  5. Transfer to muffin tin, evenly distributing across 12 tins
  6. Sprinkle 1/2 tsp mini chocolate chips on top of each muffin
  7. Bake for 15-20 minutes or until a toothpick comes out clean
  8. Let muffins cool on cooling rack for 15 minutes
