Pumpkin Collagen Bites

Ingredients

  • 6 TBSP almond butter
  • 2 TBSP canned pumpkin
  • 2 TBSP maple syrup
  • 1 TBSP coconut oil
  • 2 scoops Orgain collagen peptides
  • 1/8 cup oat flour
  • 1 teaspoon pumpkin pie spice
  • 2 TBSP mini chocolate chips
  • Chocolate layer:
  • 3 tablespoons melted coconut oil
  • 2 tablespoons nut butter
  • 2 tablespoons cocoa powder
  • Crumb topping:
  • 4 ounces instant oats
  • 2 tablespoons coconut sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons maple syrup

Instructions

  1. Mix the pumpkin mixture in a bowl and the chocolate mixture in another bowl.
  2. Scoop pumpkin mixture into the cavities of a silicon ice cube tray, filling each about halfway, and press mixture down.
  3. Pour a thin layer of chocolate on top of each until all are covered, then go back and add more chocolate to each until you run out.
  4. Make the crumb topping and sprinkle a generous tablespoon on top of each bar.
  5. Place tray in the fridge to harden for 20-30 minutes and enjoy.
  6. Store leftovers in the fridge. Makes 8 bites.
