Kale & Bean Soup

Ingredients

  • 2 scoops Orgain Organic Protein Plant Based Protein Powder - Unsweetened
  • 2 tbsp extra virgin olive oil
  • 1/2 large white onion — 1 cup diced
  • 2 carrots — 1 cup diced
  • 2 celery stalks — 1 cup diced
  • 5 garlic cloves — finely chopped
  • 1, 28 oz can diced tomatoes
  • 2, 15 oz cans cannellini beans
  • 4 cups vegetable broth
  • 1/2 tsp kosher salt
  • 1/2 tsp italian seasoning
  • 1/4 tsp crushed red pepper optional
  • 4 cups kale — 2 oz chopped

Instructions

  1. Heat olive oil on med-high heat, adding onions, carrots, celery and garlic—sauté 1-3 mins until tender.
  2. Stir in tomatoes, veggie stock, beans, salt, italian seasoning, and (optional) crushed red pepper.
  3. Bring soup to a boil; then simmer 10 mins, stirring in Orgain protein powder.
  4. Add kale and simmer until kale is wilted.
  5. Note: You can add kale during the simmering process, if you prefer.
